Consider the Field of a Certified Dietary Manager
In 1 semester, earn your Certificate of Proficiency, take the CDM Credentialing Exam to be a Certified Dietary Manager and a Certified Food Protection Professional (CDM, CFPP)! Black River Technical College graduates of the Nutrition and Foodservice Management program have a 100% pass rate on the certification exam for the fourth consecutive year!
Or earn your Associate of General Studies with a nutrition and dietetics focus and transfer to a 4-year for a bachelor’s degree in nutrition!
Certified Dietary Managers work in a variety of settings, including but not limited to long-term care facilities, assisted living facilities, acute care hospitals, rehabilitation hospitals, school nutrition programs, and correctional facilities. Graduates have the opportunity to continue their nutrition education at BRTC by pursuing the Technical Certificate in Nutrition and Foodservice Management and the an Associate of General Studies with a focus in nutrition and dietetics.
Graduates of the Nutrition and Foodservice Management program gain classroom and clinical experience in the management of commercial and institutional foodservice operations. Individuals will learn about
- routine nutritional services,
- ordering supplies,
- equipment, and
- food safety.
They will also gain experience in data management for food services and will learn to apply human relations techniques to personnel issues. Students who graduate with the Certificate of Proficiency in Nutrition and Foodservice Management are eligible to sit for the CDM Credentialing Exam. By continuing their education with the Technical Certificate, students are eligible to gain the Certified Food Protection Certification (CDM, CFPP). All CDM courses are available in a traditional or online format.
Degree Plans
The AAS Nutrition and Dietetics degree will no longer be offered effective Fall 2022. Students interested in pursuing a transfer degree in the field of nutrition and dietetics will be enrolled in the Associate of General Studies and advised with an emphasis in nutrition and dietetic courses. See your academic advisor for additional information.
Graduates of the Associate of Applied Science in Nutrition and Dietetics degree are prepared to transition into a baccalaureate degree program in articulated university programs to pursue a career as a Registered Dietitian.

Accreditation
The Certificate of Proficiency and Technical Certificate in Nutrition Dietetics and Foodservice Management are approved by the Arkansas Department of Higher Education and ANFP-The Association of Nutrition and Foodservice Professionals. The Associate of Applied Sciences in Nutrition Dietetics and Foodservice Management degree is approved by the Arkansas Department of Higher Education.
Any student whose plan of study is interrupted due to military service obligations while enrolled in an allied health program will be guaranteed readmission upon return. The student will be required to meet the readmission standards set by the program.
